Pan-broiling is a quick, low-fat cooking method for thinner steaks and ground beef patties. It is one of the simplest cooking methods because all that is needed is a skillet. Be sure it is large enough so the beef is not crowded to avoid steam build-up. Also, because no fat is used a nonstick skillet is recommended.

1. Heat heavy nonstick skillet 5 minutes over medium heat.

2. Season beef (straight from refrigerator) as desired. Place beef in preheated skillet. Do not add oil or water and do not cover.

3. Pan-broiling according to chart, turning once. If steak is more that 1-inch thick, turn more often. Remove excess drippings from skillet as they accumulate.
